I know they are in season. I've called around a few of the usual sources. They keep saying "call us back in 3-5 days and maybe we'll have some." What's going on? Anybody have sources that are getting them? Wanna share the cost, too?

(No, I don't want frozen softshells, thank you. Still alive or recently dressed, please.)

from my experience, they are not in season by the end of July. I was down in Beaufort, and in a seafood store last weekend (July 25), and they said they were out of season.

Strange. I called Capital Seafood yesterday and they said they were still in season, but had been in short supply this year. Maybe they misunderstood what i was asking.

And this article says April to June. I've never seen local softshells this late in the year. Perhaps they come from further north late in the summer?

I think this year was a slow season for them. Locals hasn't had them fresh as often as they usually do. I've definitely bought them fresh in August in the past.

Softshells are my favorites.

Crabs molt in spring. The soft shells are collected before they grow the new, bigger shells. If you get them fresh this time of year, they've been farmed.
