I AM a cheesesteak snob. Anvils is the best in the area. Every time someone refers me to "the place that does it right" it's nowhere near a real cheesesteak. Places like Best Steak, Fat Phillys (when they were open) etc...sure, not bad "steak and cheese", but not a real cheesesteak. Anvils is closest to it, and even then, it's still a variation and not the real deal. Even when they get Amoroso rolls shipped...there's an art to a good cheesesteak and no one has it down here (Anvils is close). I was referred to a pizza shop in North Raleigh that's supposed to be good I haven't tried yet, can't recall which one but I'm guessing someone will chime in.
Oh and jersey Mikes shouldn't be even mentioned in this thread. I promise you, it's like a mcdonalds cheeseburger in a "best cheeseburger" conversation. That doesn't mean you don't eat one from time to time, doesn't mean it doesn't taste good to you perhaps (it's horrible to me, not edible, but everyone has their opinion) but it belongs nowhere even remotely close to an informed best cheesesteak conversation.

What is not edible about it? It's steak, and cheese. I'm sure it's not the highest quality beef, but it's a steak and cheese what do you expect
Other than not using wiz, Jersey Mike's reminds me a lot of some of the cheesesteaks I had when I lived in Philly. It's shaved ribeye, onions, and cheese on a roll. What's there to mess up?
In Philly if you go to 99 different restaurants you'll get 99 different variations on the cheesesteak so saying it's not a "real" cheesesteak is just silly. There ain't no such thing as an ANSI standard for cheesesteak.
I'll admit I even like their version with the chipotle mayo on it.
Type of cheese is not relevant to being a real cheesesteak or not. Use of steakumm is immediate DQ, as an example of what is relevant (that means you, Jerrys, jersey mikes, 90% of "steak and cheese" shops here, etc)...things like type of bread, quality of meat, how it's cooked, what it's cooked with/on, how it's layered, what type of peppers, what type of mushrooms, onions, how they are cooked, etc. Can go on and on. "It's just steak cheese and bread" people, please stop. Just dont, not interested. You'll never convince me otherwise and I couldn't care less if I convince you. Go enjoy your soggy jersey mikes w a smile, all good.
None of the trucks here get it right either. Close, kind of. Kings/Philly Cheesest are the only ones I've tried, if anyone know of others I'm all ears.
