Another idea is walking around UNC's campus if the weather's nice. Or the Duke Gardens. We will also sometimes eat dinner in and go out for dessert only (or vice versa with apps out and dinner in). Or eat dinner then go to a pub for a beer or two just to get out for a bit. Museums are great suggestions and first night.

Geocaching in a local park as part of a hike.
Check nearby high schools to see if they're putting on a musical or play. Tickets are usually $10 or less, and the shows are often very good.
Buy ice cream and sit on the rockers on the front porch of Maple View.
Walk around downtown Hillsborough or along their riverwalk.
Not this time of year, but fruit picking is a lot of fun and pretty inexpensive. Plus you keep what you pick and can turn it into something yummy.

Lots of places offer half price wings/apps on Tuesdays. You can also go to Park West Theater in Morrisville for $5 on Tuesday. Then even have a $5 popcorn/drink combo. Tuesdays are a good day to eat out and watch movies!

I always thought dinner and a movie was hard to beat for date night. It can be done of a budget too.

Costco, any night. $1.50 for a hot dog and a bottomless soda. Great hot dogs, and it weeds out the gold-diggers.

(Jokes aside, going to cheapo, dive restaurants is a great date night. Not Costco, but you can eat cheap, well, and have a great time.)

Last time we visited, we would choose a dinner and a dessert place. More often than not, we wound up at Bittersweet for drinks and dessert.

In Hillsborough Bacon's Meat Market has very good made to order sandwiches and many prepared salads (potato, fruit, etc.) for a picnic!
