Interesting that he can get ESPN with the Orange package, or Fox and NBCSN with the Blue Package, but no option to have both on either package, not even as an add-on.

Yeah while there is some better flexibility, it still sucks if you want a certain cable channel or not - it's not true a la carte service, just faux service at this point. If he wanted ESPN, he would have to buy the Orange package in addition to the Blue package.
Maybe some other services like DirectTVNow or PlayStation Vue might have better bundles for your needs. I haven't looked into it that much since I don't watch a lot of TV.

Mrs. watches a lot of TV, and I really only care about Hockey, and watching some stuff she likes to spend time with her.

I watch a lot of tv and sports so I just bite the bullet and pay for it. I like just turning it on using the guide and finding what I want to watch. I do have Netflix which I used a lot during the summer but now that football and a lot of my shows are coming back I probably won't use Netflix much. i love the DVR and my internet is fast and reliable. I have Time Warner.
If i really had to cut costs I would consider it but for now it's relatively cheap entertainment compared to going out a lot.
Bought a Roku two years ago. Best $185 per month raise I ever gave myself. All of it now goes right into mutual funds. Never going back to cable/satellite. Can't recommend it enough.

Considering today's salaries for athletes, you are probably getting a good deal. Unfortunately non sports subscribers have been subsidizing channels like ESPN for a long time. With the these large rate increases I don't think that model can last. Most young people I know really don't care about TV that much anyway.
