I went to Dashi after a friend raved about, but thought it was mediocre. I really love Japanese ramen and ate a lot of it when I lived in NYC. I’ve tried many varieties, but the noodles make a huge difference for me. I don’t know where local restaurants source it down here, but it’s not the same. I’ve also found most of the broths locally to be sort of bland and lacking the depth of flavor of a good ramen bowl.
I have only been to Dashi twice I think, but I thought it was very good. I'm not a ramen expert though. I found the broth very rich — almost too rich. Might be worth another try.

We ate twice at Dashi too. Ramen just didn’t do it for me. I’m a bigger fan of good pho.
Haha that's the equivalent of thinking that mac & cheese just comes out of a Kraft box!
I've never been but I've heard mixed reviews about it so never bothered to try (I did try Rose's in Durham once when M Kokko was slammed and it was pretty decent)
Yeah I've seen "artisan" Mac & cheese and just rolled my eyes.
My favorite was bottled water that was from an "artisan well".

like pizza, bagels, delis, knishes, etc etc etc - if you think you're going to find the equal of a NYC dish down here - it's you making the mistake. And I also realize that unlike NYC water, the equivalent for many of these dishes should be theoretically reproducible anywhere.

A Philly cheesesteak - never as good as Philly.
Brisket - never as good as Texas.
Tacos - never as good as AZ/NM
That's what my response was going to be.
That being said - is there anything that Raleigh is exceptionally good at? I feel that even there's a lack of good BBQ places around here.
Ramen isn't a NYC dish. Ippudo is a ramen chain from Japan that has a couple NY locations. If we got an Ippudo here, it would be delicious because it's Ippudo. Nothing around here comes close though.
Edited to add: That isn't to say you can't find some tasty noodle soups around here, but if you're looking for authentic Japanese ramen we don't quite have that yet to my knowledge.
