Saturnfan touched on a VERY important point JOBS. Either have one before relocating here or plan to go a LONG time without one. Yes you may be one of the lucky few that quickly find gainful employment but I strongly suggest that you don’t take any unnecessary risks. Good luck!
Just curious did you ever make your move. My wife & I are thinking of relocating to Cary we are also Jewish and have the same questions that you had. Wc have 3 school aged children.Any input would be greatly appreciated.
I have been now lived in Cary a few months and and while it isn't Northeast, South Florida, or LA, there are small pockets of Jews around the area. It isn't unheard of to bump into someone at a park or grocery store and find out they're Jewish.

Since this was already bumped up, I just wanted to add my $.02:
There is an active and vibrant Jewish community in the Durham/Chapel Hill area. There are Conservative, Reform, and Reconstructionist synagogues, plus a Hillel at UNC and a Jewish student center at Duke. There are many Jewish faculty members, there is a Jewish day school that goes up to 5th grade, there are Hebrew schools, there is a kosher meal plan at Duke that community members can go to, and there is a newly build JCC in Durham, right on the border with Chapel Hill. There is some Chabad presence on both Duke and UNC campuses, I believe.
There are also some 20 and 30 something singles and couples who are Jewish, though less involved with the formal community. Otherwise there are many families with children of varying ages from infant to high school and college, empty0nesters, and retirees.
We now have an NY style (but not Kosher) deli on Falls by Harris-Teeter in Raleigh.
Weinberg's The Delicatessen has some great items that make you feel you just got off the D train.
