1) What kind of meat (what cut is it)
2) Where can I get in the triangle?
Pretty much the same meat as Korean bul go gi, right? Same question applies then - I want the meat...I think it's Rib eye, but where do I get (No, I don't want Steak-umms )
S-Mart in Cary has the thin sliced ribeye... in the frozen section to the left side of the store (as you're coming in). It's located by Mac's tavern behind DQ.
I recommend rib eye as did douknownam. It might be possible to have harris teeter slice it thin for you. I know I get custom cuts from them all the time. They usually have it on sale for 4.99 a lb.
Seconding this! If that's really true, I'll stick to non-authentic versions, thanks.
Sorry....but it really is true! If you go to a grill on South Street in Philly, you will see the big #10 can of Cheese Whiz sitting right on the grill so that it keeps warm!
Of course, I believe these days you can get Provolone if you want that - even in Philly -- since it has become such a popular alternative.
I know that Pat Kings of Steaks and Gino's Steaks (two of the biggest Philly Cheesesteak institutions in Philly) use thinly sliced ribeye. If you want to go a bit cheaper, I suggest you go with very thinly sliced (almost shaved) flank steak. I had this at a sandwich shop once and thought the flavor was better than the ribeye (and just as tender).
And, yes, all the philly cheesesteak shops in Philly use Cheese Whiz unless you ask for something else. The "local" way to order your sandwich in Philly is to ask for the cheese you'd like and specify if you want onions or not. For example, you would walk up to the window and say, "Whiz, with" and they'd know that you want a cheesesteak with Cheese Whiz and with onions (the with referes to the onions).
