We love Doc Greens over near Southpoint Mall in Durham. Not sure if they've got any out your way though.

I like Mimi Cafe's Chopped Cobb salad with vinaigrette dressing in the BJ's plaza on Capital. Not far from Wake Forest. They offer a "lower calorie" version, but it's exactly the same salad but with lower-cal dressing. With bacon, avocado, and egg, the salad probably isn't the healthiest option, but it's good.

I love this place in the food court at Crabtree, I think its called Crisp. Right next to Moe's. Salad fresh tossed as you order with all the bits you want and none of the bits you don't! Lots of choices. Really good stuff. Wish they would open a drive thru in NR!

We used to go to Jason's Deli every weekend for the salad bar. Now we've moved too far away. I like Bear Rock's chicken poblano salad. Another decent salad bar. . . . but I hate the restaurant. . . . is Sweet Tomato. Panera Bread's salads are OK. I like Bear Rock better though.

Surprisingly, Mellow Mushroom in WF has some tasty salads.

Lilly's Pizza in Five Points has a great salad. Good, fresh ingredients at a locally owned restaurant.

You could be talking about Spize on Fayetteville St. Spize Cafe
I believe they opened last summer. Been meaning to try it myself. Menu is on the website.
