Despite all the rankings and ratings out there about schools, it seems almost impossible to find information on 1) number of students graduating and 2) colleges the students move on to.
Anyone know if and where this kind of information is available for the triangle area? Would one have to go ask each school individually? Would they be likely to divulge the information or is it top secret/ hush-hush?

It's available, I used to work at local college and remember receiving it a few yrs ago, just not sure of the source.
NCDPI should either have it or be able to steer you in the right direction. You could call NCSU admissions office, or Wake Tech, they would know.
Wake County school admin office might help you too, worth a call.

For NC state schools UNC (Chapel Hill) and State (NC State) are very difficult to get into. I can speak for Green Hope because that is where my children went. For state schools the majority went to East Carolina, UNC Wilmington, Appalachian State or Wake Tech. The rest Western Carolina, UNC Charlotte and UNC Greensboro. After this they applied for a transfer to either State or UNC.
This should give you an idea. Not exact. Wilmington and ECU are popular schools for graduates all over the area.
There's a lot of data published by each college on an annual basis. I don't know if it answers your questions - search their websites for "fact book." For example, here's ECU's:
