Kings Red & White on Roxboro & Club in Durham is a good old fashioned meat market in Durham. You can get any meat cut to order. They have a Facebook page too.

There's also the new "hipster" Rose's Meat Market on Gregson off Main St too, but I hesitate to recommend in spite of their rave reviews due to food prep and cutting demo's he's done at our farmer's market. I've been going to big city butcher shops all my life and have never seen anyone handle meat in such a disgusting and almost abusive way. Yanking, slamming, squeezing the blood out of innards and such, not to mention lots of cross contamination. Sorry to be so graphic, but that's all I needed to say NO WAY. He's a young kid who any good old fashioned butcher would cringe at. Maybe he's seen too many slasher movies!

I can't personally speak to this but out of curiosity I checked out Rose' s website. That place sounds awesome. The guy is a trained butcher and chef. They even offer classes. Hard for me to believe he's just some amateur wielding a knife. I'm thinking maybe the techniques are different. Nothing wrong with some tenderizing before I get it home.
