Looking for a series of videos that go over the basics - how everything works in a typical home, types of roofs, countertops, flooring, etc. with pros and cons of all the different choices and how to spot obvious issues. Any suggestions?

Find experts in your area and learn from them.

I ALWAYS attend every home inspection. Over the years I can almost do one myself, my inspector is wonderful about explaining things and pointing out issues and the "whys". I've learned more from him than any youtube video. There are just some things that only time and experience can teach.

Visit some local contractors, find out what the latest "trends" are in flooring, tiles, kitchens, countertops, etc.

You are not going to learn what you need for you local market from a youtube video. Your best lessons will be learned on the job.

Home Depot has classes on how to build stuff, repair stuff, lay tile, etc. That would give you a working knowledge of some parts of home maintenance.

There's no such thing as a "layman inspection." That's what we call "guessing."

You can stream old episodes of "This Old House" on Hulu. HGTV and DIY Network shows now might be a lot flashier and more entertaining, but nothing can top Bob Vila for pure informational value.
