I had a 300 bottle wine fridge in my last house where I cellar some rare wine I didn't want to store while showing (I have about 1000 bottles in my collection, most went to a temperature controlled storage unit or friends' homes). I don't know why I am surprised, but after the very first showing, someone had gone into the fridge, examined all my bottles, and put them back on the wrong shelf.
When your home is on the market, you know you aren't going to have much privacy. However, this made me feel completely violated for some reason. I had a lock installed on the fridge for the remaining showings.
Nobody ever seemed to touch the 4 or 5 bottles of hard alcohol I had on a shelf behind my bar. I had used idea #3. Only the most top shelf brands, anal retentively positioned exactly 6" from each other, with an LED light I installed under the shelf shining up on the label.
Two/three bottles, two wine glasses, a cookbook on a wrought iron book stand opened to a colorful yummy horsdourves(sp?) page, an elegant bowl with fresh fruit and fresh flowers.
I'd put it away and lock it up if it's the expensive stuff.
We had our son's medication stolen during a showing--and it was in a cabinet! It was not during an open house either (we don't do those). It was someone who came through WITH their realtor!
We take all of our electronics with us when we have a showing, and now take the medication with us too.
I've seen plenty of bars that look as aesthetically appealing as a beautiful work of art. I've also seen plenty of bars that are reminiscent of someone's college dorm room on a Sunday morning. Yours sounds firmly in the former camp -- so I vote for door #3, particularly as you live in an area where drinking is widely accepted. If you lived in the South (and I say this as a native Tennessean), my answer would be quite different.
As long as you're comfortable with the potential for theft (because people are crazy), I say that a few tastefully arranged bottles on your bar would be fine, and look quite nice. In fact, your potential buyer may decide to have a similar arrangement once they move into the house thanks to this inspiration!

#3. It's a bit far for me to drive, but I'd help you whittle down the number of tequila bottles.
