I made these last night for work and I've already gotten near marriage proposals (a girl can dream, right?). They're super easy and delicious!

Adapted from this recipe.


3/4 cup butter
1 cup packed brown sugar
2 teaspoon vanilla extract
6 cups quick cooking oats
2 cup semisweet chocolate chips
1 cup peanut butter
  1. Grease a 8x13 inch pan.
  2. Melt butter in large saucepan over medium heat. Stir in brown sugar and vanilla. Mix in the oats. Cook over low heat 2 to 3 minutes, or until ingredients are well blended. Press half of mixture into the bottom of the prepared pan. Reserve the other half for topping.
  3. Meanwhile, melt chocolate chips and peanut butter in a small heavy saucepan over low heat, stirring frequently until smooth. Pour the chocolate mixture over the crust in the pan, and spread evenly with a knife or the back of a spoon.
  4. Crumble the remaining oat mixture over the chocolate layer, pressing in gently. Cut into squares while the mixture is still warm. Cover, and refrigerate 2 to 3 hours or overnight.

Whoohoo! I hope you enjoy them!

The guy at work I'm crushing on emailed me to tell me how great they were and even came up to me a few minutes ago to ask if he could take some home Score!!

I just put this in the fridge too. I didn't have the full 2 cups of choc chips so I added some peantut butter chips that I had to to make the 2 cups. It looks good. And I LOVE peanut butter. My 11 yr old dd says this would be a healthy breakfast because it has the oats in it. Gotta love the way that kid thinks.
