All of the above sound so good. I make a very chunky apple sauce with walnuts and raisins. I add it Greek yogurt, put it on toast with peanut butter or just a huge dollop of vanilla ice cream. Homemade apple pie is heaven.

Apples are my favorite.
Chunky apple sauce is delicious. I like the idea of adding walnuts and raisins. There is something about apples that cry out for vanilla ice cream.
Apple crisp. I choose Granny Smith and some sweet red apple. I peel, core, and slice my apples—fairly thin: I don't like much crunch—then toss the slices in lemon juice, cinnamon, and a little brown sugar. I arrange the apple slices in a baking dish, maybe an inch thick, then cover with a not-quite-as-thick amount of streusel topping, which I make in the Cuisinart from butter, flour, brown sugar, white sugar, cinnamon, and salt. I don't like any other spices, but you should use the ones you like. Vanilla is optional.
Sometimes I put raspberries in.
I bake it at 375 for 30-40 minutes (the time difference is a matter of the balance between how thick the apples were sliced and not wanting to burn the topping).
I like it at room temperature with whipped cream, but you may prefer vanilla ice cream, which holds up better, obviously, if you like it hot.
I love apples! Apple pie, apple galette, caramel apples, apple butter. The last one reminds me of my grandparents because they introduced it to me.
