You could easily use chunks of pork or chicken for this instead of meatballs.
This makes 4 servings.
Meatballs:
1 1/2# ground beef (I suppose ground pork or chicken or turkey would work)
1 egg
1/3 c. breadcrumbs
1/2 c. finely chopped onion
1/3 c. milk
Salt & pepper
Mix well, form into balls and bake on a sheet pan until cooked. 375 about 20 mins.
Sauce:
1 large can pineapple chunks, undrained
1 large green pepper cut into 1" chunks
1/2 c. sugar
3 T. soy sauce
2 T corn starch
1/4 c. vinegar
In a large pan, mix cornstarch, juice from pineapple, and other ingredients except pineapple and green pepper. Stir over medium heat until it thickens. Add green pepper and pineapple and heat through. Stir in meatballs.
