* 1 cup diced fresh pineapple (1/4" dice)
* 1 tbsp ghee
* 1 tbsp sweet raisins
* 1 pinch hing (asafetida)
* 1/4 tsp cumin seed, dry-roasted and crushed
* 1/8 tsp turmeric
* 1 pinch black pepper
* 1/8 tsp ground cardamom
* 1/2 tsp turbinado sugar
* 1/8 tsp minced ginger
* 1/4 tsp lemon juice
* Rock salt to taste
Heat ghee in a pan until it is clear.
Add the hing. Stir briefly, then reduce heat to medium and add the raisins. Stir until they plump up.
Add the pineapple and other ingredients. Stir briefly to mix well. Cook covered, stirring occasionally to prevent sticking or burning, until the fruit is tender, about 6-7 minutes.
Enjoy as a condiment with a main meal or on toast or crackers.
