Sounds like you want to make Spanakopita,


SPANIKOPITA

2 (10 oz.) bags spinach
1 tsp. salt
1/2 lb. feta cheese
1/2 lb. cottage cheese
1 lb. butter
1 pkg. filo dough (grocers freezer)
Pepper to taste

Wash and dry spinach, chop in a large bowl. Add remaining ingredients, mixing well. Prepare 13 x 9 inch pan with filo. Arrange 1/2 package by laying down 1 piece of filo and brushing with melted butter. Fold remaining dough over the other piece and brush with butter. Spread spinach mixture and repeat instructions for filo. Cut before baking at 350 degrees until nicely browned.

DR EARTH,

I'd see no reason you could not sub butter for shortning, it's done with biscuit and pie crust recipes all the time.
All you can do is make a small batch and test the theory.
Hey if it dont work in the fryer you could cut the dough into rounds and bake it with some cinnamon and sugar and have desert.

You dont need to have a meat filling either, fill them with what you like and i'm sure you will be pleased with the results.
