I do the same thing with tamales, it takes two days to make them correctly. So, you may as well make a bunch. They are delicious!

They look similar to pot stickers. Is that basically what they are?

No they are very different. The outside of potstickers is made of something different I think, because it is much thinner. Perogies are much thicker. Also potstickers have meat and/or veggies inside. Perogies have potatoes and then something else (cheese, mushrooms, or something similar) and then are usually eaten with sour cream or apple sauce on top. The taste is completely different from potstickers and they (perogies) are much more filling. They are delicious!

Perogies are common in eastern Europe and as has already been said, not at all like potstickers. Pierogi - Wikipedia, the free encyclopedia Varenyky - Wikipedia, the free encyclopedia

In my Russian-Ukrainian Mennonite culture they are called Vereniki (see second link). Among Mennonites they are usually stuffed with cottage cheese, and either boiled and served with a cream gravy and farmer sausage, or boiled, and then pan-fried and served with sour cream and fried onions.

There are so many people in my area who have made cottage industries out of making vereniki, that I no longer make my own but just buy them.

Also, the cooking technique is different.
