They are a wonderful substitute for Tomato Sauce, just reconstitute them by adding equal water, and they are salt-free, so you can control the sodium content. And best of all, if you just use part of a can, the rest keeps almost forever in the fridge. If you let it dry out, so its very stiff (as in hard') it's still good and can still be reconstituted.

Here's a great pasta sauce, that is so camouflaged, even the kids will love it. Mix a couple of cans tomato paste with equal parts water, and put it in the blender with a whole onion and a whole green pepper (both cut up) and some olives. Drop in a couple of slices of bacon and a little olive oil for body, and some chopped garlic or garlic powder. Let the blender turn it into a uniform sauce, then boil it a while, so the veggies won't taste raw. They'll love it, and won't even know they're getting a dose of healthy vegetables. And it'll be much cheaper than a jar of spaghetti sauce.

Toss in a can or three of anchovies for puttanesca sauce.

Tomato paste is also much lower in sugar than tomato sauce.

I use it a lot: I will open a can, use a little, then put a few Tablespoons in plastic baggies and freeze. A little goes a long way, so it doesn't take much. It is great in home made spaghetti sause, stews and soups.

Since this thread is still around, I'll join- add tomato paste with some onion and seasonings when cooking white rice for a quick, tasty red rice
