many years ago (like 50 maybe) I used to make a wonderful summer pie with fresh strawberries, jello and ice cream but I am not positive of the meaurements. By any chance does anyone have the recipe, something similar or remember this?

thanks I will try. I think I do remember how to make it but am not sure. I do remember it was called Strawberry parfiat (spelling) pie.

I just googled and found about a million (well not that many) recipes, they were all the same and really easy as I remembered. In fact I had the exact measurements in my head and was pretty much correct. Now I can go to bridge next Wed with my pie...

ok, here it is: easy, easy, easy!

1 -9 in gramham cracker crust (I buy mine) you can make your own if you want.

1 pk of strawberry gelatin

1 cup hot water

10 oz package of frozen strawberries or 2 cups sliced fresh strawberries

1 pint vanilla ice cream

1/2 pint whipping cream or you can use a whip topping

in a med sized bowl dissolve gelatin in hot water stirring until completely dissolved.

Add ice cream and stir til melted. Place mixture in fridge until it starts to set (usually not more than a few minutes) Do not let it set completely.

remove from fridge, add strawberries and pour into pie crust. If you are using frozen strawberries make sure you put them in a strainer and allow to set until some of the liquid is gone (about an hour)Return to refridge until set, about 3 or 4 hours. Just before serving top with whip cream. This is easy, not too heavy and really tasty.


You can use peaches and peach ice cream instead or just substitute what sounds good to you. I used a large pie crust and adjusted by using 1 1/2 times the recipe.
