Food.com has a forum dedicated to OAMC (once a month cooking). There will be lots of recipes and ideas there. Cooking on a Budget: OAMC, Make Ahead, Freezing More Community Forums - p1 - Food.com

I don't have the freezer space to do once a month, but most recipes could be easily adapted, I would think.

Thanks I do freeze some meals, I buy chicken legs and thighs in bulk and put 3 or 4 of them in zip loc bags, I make my own hamburger patties and freeze them individually and I freeze soup or sauce. I don't have alot of room either for once a month cooking. So I figured I'd make 3 meals in one day which should last the week and have some veggies as side dishes each night. Never had 2 jobs before always had one full time but economy is tough.

I make an army-size veggie salad, super filling, and eat it an eighth of a batch at a time until it is gone:

Chop 2 good-sized apples with the skins still on, and toss in a large bowl with one of those little flat cans of crushed pineapple. If you use fresh pineapple, about 1/4 of the fruit, chopped, should do the job. Make sure the apple pieces are coated with the juice so they don't brown.

Smithereen in food processor or blender:

1 medium beet, red or golden, top and tail removed and scrubbed clean with a brush
4 medium or 2 huge carrots, peeled
2 small parsnips, peeled

Scrub and slice diagonally:

2 large or 4 small celery sticks

Toss everything together.

This does not need a dressing; it is sweet and savory at the same time.

Make a big batch of baked beans, broil half a package of your favorite hotdogs, slice them and mix them in with the beans. This is a meal in itself.

That sounds good too but I am also doing weight watchers so the meals have to fit my plan and so far what I have made in bulk is WW friendly and delicious.
