1 lb fresh green beans

1 tbsp salad oil & 1/4 cup that will be used at the end

1 small onion thinly sliced or diced your choice

1 (4 oz) jar of pimentos

1/4 cup cider vinegar

2 tbsp sugar

1 tsp salt

Boil green beans until tender-crisp and drain. Set aside.

Heat 1 tbsp salad oil add onion and cook until tender.

Drain pimentos, save back 2 tbsp of that liquid and set aside. Cut or dice pimentos and set them aside.

In medium bowl mix vinegar, sugar, salt, 1/4 cup of oil and the pimento liquid. Mix in pimentos, onion, green beans. Toss, cover and refrigerate at least 2 hours before serving. Stir occasionally to mix flavors.

This recipe works well using asparagus, too! I've also substituted sweet red peppers for the pimentos.
