hi to all this is a very simply recipe, very popular in the north Italy

Ingredients for 4 servings:
400 grams of rice
1.5 liters of broth
200 g of dry white wine
40 g butter
40 g of beef marrow
40 g of Parmesan cheese 24 months
30 g of onion
0.5 grams of saffron pistils

Preparation: Fry the onion in the butter with 20 g of crushed bone, add rice and cook over medium-high heat for 2-3 minutes, stirring gently but often, then add the white wine and let evaporate. Then add 3 ladles of hot broth, stir gently and do not touch until the next addition of broth. Halfway through cooking add the saffron dissolved in a ladle of hot broth. Turn off the heat when the rice is "al dente" it mean not yet soft add 20 g of butter and Parmesan and stir vigorously (whip) for 20-30 seconds, then let the risotto to rest for only 1 minute and then serve


in this case l ad a fresh red wine--- cabernet ---

hello
surely as a first course, it goes very well with a second dish of fish and vegetables



if you use fish in this contest l suggest a fresh sparkling white wine it could be " verduzzo " anyway a dry white " tocai " sounds good
