I was going to do a similar recipe with habaneros replacing the jalapenos, but maybe dicing them up like you suggested is the way to go. That sounds really good.

If you remove all the seeds and the membrane (white near the sides) they really, normally are not that spicy. We stuff them with cream cheese, blue cheese, sometimes dried beef or little slivers of any type of meat (not always) green onions, a little garlic (but you can leave that out) maybe small crushed nuts. Top with parmasen or some other cheese and heat at 450 degrees for about 10 to 15 minutes or we grill them.

Yeah I thought maybe that sounded good since the jalapenos are a more sturdy pepper and could probably handle the oven better.
