Fresh baby spinach (9 oz bag)
1 cloved minced garlic
1/2 of a vidalia onion minced
1/2 tsp nutmeg fresh grated or dried
1/2 daisy light sour cream
1/4 cup 1% milk
2 Tbsp corn starch
2 tsp olive oil
1 tsp salt

Heat olive oil in a large pan. Saute onions and garlic on medium high for 5 minutes. Add spinach and cook until wilted. Add salt and nutmeg and stir.Add sour cream and milk and cook for 2 minutes, stir in cornstarch and stir until thick.
I made this tonight and we both enjoyed it. It was just something I made up. If you don't want to use lowfat milk then use heavy cream. I made this in a lowfat version but feel free to use regular sour cream.
