Do you think its possible to half a baking recipe that calls for 3 eggs? Not sure how to pull that one off!

Or would I have to divide all the ingredients by thirds instead and do 1/3 or 2/3 of the original quantities?

I'm sorry I don't have an exact answer, but I would guess your plan might work. That said, baking is a bit of a science, little changes to a recipe can completely change the outcome.

Ok, I will post it:

Its the biscuit recipe on the back of the Bisquick Gluten Free Baking Mix

2 cups baking mix
1/3 cup shortening
2/3 cup milk
3 eggs

I don't want a large amount of biscuits all at once, that is why I am trying to half the recipe.

I've always heard to whip the eggs and divide them in half. Personally, I'd just use two eggs.

You can easily replace an egg with apple sauce or banana -
1/4 cup apple sauce or 1/2 banana per egg.
You will not even taste the difference, except your biscuit will be nice and moist
Many people substitute eggs for less cholesterol recipe .

I am going to beat the eggs and then divide in half....and cross my fingers it works!

That is what I do to divide a recipe in half, when i need to split a three egg or five egg recipe.

Reporting back: the 3 eggs I used ended up making 2/3 cup of beaten eggs, so very easy to divide in half!

I'll come back after I've baked the biscuits to report if they turned out edible.
