There's this restaurant I go to often and my wife always get the same dish (linguini and broccoli), however they've raised their prices a lot and I'm looking for a recipe to make it for my wife at home for dinner. It seems simple however whenever I try to make it, it doesn't come out right. The olive oil taste is always too strong.

Basically what I'm looking to make is Linguini & Broccoli in a garlic olive oil sauce. Whenever I try to make it I can barely taste the garlic and just taste pure olive oil, no matter how much garlic I put in it. Does anyone know a good recipe for this where there's still olive oil but it just tastes like garlic? I'm getting frustrated lol. Do I just need to sautee the garlic in the olive oil slower? I'm thinking maybe I'm doing it too fast so that the garlic isn't really flavoring the olive oil enough.

Restaurants always cheat. Try using some clarified butter along with the olive oil.

Rub the saute pan with cut garlic cloves. Smash a few cloves with the side of a knife. Place them in the saute pan with a half stick of butter, clarified. Add olive oil and heat until the smashed cloves are just about to, but do not brown. Remove the smashed cloves, add the linguini and other ingredients such as chopped black olives and/or shrimp, stir, and remove to a bowl.
