Made this last night and we thought it was good....
1 can Cream of Chicken soup
1/2 c. sour cream
1 cup salsa
2 t chili powder
1/2 c shredded Mexican cheeses
2 T chopped fresh cilantro (optional)
6-8 tortillas
2 cups cooked shredded chicken
chopped tomato and green onion
Mix together the first 6 ingredients. Mix the chicken with 1 cup mixture.
Divide mixture among the tortillas and place seam side down in a 13x9
Cover enchiladas with remaining mixture. Cover with foil, Bake 350 for about 40 mins or till bubbly. Top with tomato and green onion
The recipe doesn't say this, but next time I make it I will flip the tortillas in a pan with hot oil first so they will be more pliable.

We love this recipe and it's so easy to fix. I like the salsa topping much better than mole. And if you're in a hurry, you can use either a whole deli- or canned chicken. I think I found the recipe initially from the Campbell's Soup website...Cheesy Chicken Enchiladas.

I make this pretty often. I don't like my enchiladas dry, so I always top it with a can of enchilada sauce. Pan fry the corn tortillas first to add some flavor.
