Default great breakfast for guests

I don't know what made me think of this, but I guess it was the sausage roll recipe.

When having overnight guests and you want something quick and different here is an idea we use often. Crescent roll breakfast sandwhiches

1 package of Pillsbury (or any brand) crescent rolls (8 count)
3 eggs
1/2 lb (max) sausage (your favorite)
2 green onions
4 slices of good qualtiy cheese like colby

brown the sausage saving a little bit of the drippings. place the sausage on a paper towel to drain.
using the sausage drippings scramble the eggs til barely cooked (not dry)
chop the oions using the greens as well as the white.

Mix the eggs, sausage and onions together. You can do this the night before or that morning.
Unwrap the crescent rolls and roll them into triagles. Fill each one with some of the mixture and 1/2 piece of cheese.
Place on cookie sheet and bake according to the crescent roll directions (usually about 12 minutes) serves 4.

I like making this as it can be prepared the night before and all you have to do is assemble that morning.

I was thinking of some other ideas too that's good. Mini fritattas

take two 6 cup muffin tin and spray them with non stick butter spray

Beat 7 eggs, add salt and pepper to them, then add what ever fillings you like
Ham
cooked bacon
Cheese
sauted onions
Chives
Sausage
fresh veggies
pour into individual muffin cups and bake on 400 for 10 minutes.

Wow, both great ideas. I also like to make Biscuits and Gravy, Shrimp and Grits, and one of those ubiquitous egg, bread casseroles.
The guests I'm having this weekend don't get up til 11am, and they are on special diets, so don't even get me started.

We've never gone wrong with blueberry pancakes at our house. My father-in-law liked to squish the berries after flipping the pancakes the first time - makes a huge difference! Topped with melted butter and powdered sugar -- what's not to like?

We've got a recipe we like a lot for a sort of eat-as-you-please kind of buffet meal. I think it was intended as a hot appetizer and we've used it that way, but we've also served it for breakfast when guests all get up at different times, because they can just grab a couple or three and nibble on them. It's also a favorite go-to for Christmas morning, because it can be eaten with one hand, offering minimal interference with the obligatory disemboweling of the stockings.

Sausage Cheese Biscuits

2 cans buttermilk biscuits – regular size, not Grands, the variety that comes 10 per can
2 1/2 cups grated Monterey Jack cheese
1 pound hot sausage, cooked and drained (could use turkey sausage if you prefer not to eat pork)
2 Tbs. Parmesan cheese
2 eggs
Salt & pepper if desired

Preheat oven to 325.

Lightly grease muffin tin (the recipe calls for using a full-size muffin tin, but we like the way it comes out with the mini-muffins better). Divide each biscuit in half, and line each muffin cup with biscuit, pressing it in to create a small well.

Mix remaining ingredients together. Place 1 tablespoon of mixture on each biscuit, tamping down a bit if necessary. Bake at 325 for 25 minutes.

This freezes well. To serve after freezing, thaw, cover with aluminum foil, and warm in a slow oven.

love all the ideas but the reason I like th crescent rolls is the simplicity and the hostess can sit down with the guest without standing over the stove cooking.

Sitting down with guests rather than futzing around in the kitchen while they're lounging... that's exactly why I love this recipe:

I make a breakfast casserole similar to this.

Put steamed broccoli in a baking pan, pour beaten eggs over the broccoli, add cheese and stir. Bake for 20 or so minutes.

I like the idea of the individual portions in muffin tins. Easy portion control - I might have to try that.

Default Boysenberry and Bacon french toast casserole.

It's the go to dish for Christmas morning as well. Everything is made ahead the night before and stored in fridge. Pop is oven the next morining.

You can find some good recipes on line. My favorite is to make it with brioche.
