1 1/2 cups heavy cream
2/3 cup sugar
1 1 /4 lbs mascarpone cheese
1 tsp vanilla extract
1 cup cold brewed espresso or any strong black coffee you have
2 tbsp sambuca
24 lady fingers preferably the hard crunchy kind
2 tbsp unsweetend cocoa
Beat the heavy cream to soft peaks. add the sugar by the tablespoon and beat again until stiff peaks form. In a large bowl, beat the mascarpone cheese with the vanilla until smooth. Fold in the whipped cream, being careful not to deflate it. In a shallow container, combine coffee and sambuca.
Dip the lady fingers one at a time quickly into this mixture, Place in a baking dish. top with mascarpone cheese. repeat these step of the dipped lady fingers and cheese until there are no more lady fingers and mascarpone. dust top with cocoa. Refrigerate 2 hours before serving.
