I had this EASY and FABULOUS salad at my cousin's house this past weekend and it will be my new go-to salad, for sure. Just wanted to share (the recipe, not the salad -- that's long gone ):

4 ears of corn, boiled, take the corn off the cobs*
12-15 grape tomatoes, cut in half, length-wise
1 avocado, peeled (duh!) and cut into small chunks
Good Seasons Italian salad dressing, made with balsamic vinegar

Put first three ingredients in a bowl.
Pour salad dressing over it.
Toss.
Done.
Eat.
Enjoy.

* Note: If corn on the cob is not in season or not available, one can of sweet corn (not creamed) will do fine.

Saw this recipe on http://www.foodnetwork.com/recipes/p...ipe/index.html yesterday, but dressing was totally different. Paula Deen has a video of it. Looks and sounds fantastic!

I'm shocked that her dressing had no BUTTER in it! Isn't she the queen of butter.

WTH? I just got back form the farmers market with these ingredients to make this same salad and saw this post. Except I'm adding minced purple onions to the mix. What are the chances of that?!? I also make my own quickie balsamic vinaigrette. THIS SALAD IS LIKE CRACK!!!

Great Post!
