thanks Kelsie! I look forward to it because most of the time its just the 2 of us and I am used to cooking for 4 or more. I am thinking this is going to be an easy way to cook for 2!

Thank you for that link. It is so easy to cook in foil and Parchment.

I remeber yrs. ago our son, (who is a Chef) came home and put meat in a brown paper bag and cooked it in our gas oven, I thought I would have a heart attack. He moistened the bag and steamed the meat, it was delicious.

Made a couple of chicken breasts seasoned last night in foil packets for my sweetie. The kids and I had country ribs in the crock pot and he doesn't eat pork. Easy as pie.

So, since I posted this, I've been doing quite a bit of this. So far, I have only used chicken. I always cut it in strips, but from what I've read, you don't have to. Last night I made a mixture of minced garlic, italian seasonings, salt and pepper, the juice of one lemon. I made two packets and covered the chicken in this mixture, as well as sliced another lemon and laid it over the chicken. Can I tell you it turned out sooooo good!

The great actor Vincent Price was also a gourmet cook, and famously he once demonstrated on the Johnny Carson Show how to poach fish in a foil packet in a dishwasher.

Here's the recipe, from Price's book "A Treasury of Great Recipes."


Vincent Price's Fish Steamed In A Dishwasher

2 well cleaned fish, cut open on the side
5 slices of bread, torn into pieces square.
3 tablespoons vinegar, or 4 tablespoons white wine
1 teaspoon salt
4 tablespoons oil
1/2 clove of garlic, minced
a pinch of oregano

Stuff the fish with the bread (soaked in vinegar or wine), salt, oil, oregano and garlic. Wrap the fish in foil very tightly (wrapping a couple of times). Put the tightly wrapped fish in the dishwasher while you do the dishes. When the dishes are done, so is the fish. Serve on a clean plate.

When the kids were little we made heavy foil packets with ground beef patties, potatoes with onions and green peppers (made sure potatoes were on one side of the packet and the beef patty on the other and the rest in the middle) , mushrooms, sometimes a wedge of cabbage and an ear of corn. We would make a fire in a fire ring and put the packets down in the wood fire among the coals and kept turning the packet. My oh my what a treat.

I dice potatos, and thinly slice carrots and onions..
Add diced fried bacon and some of the grease to each packet.
A dab of butter S&P and seal tightly..

Yes I forgot to mention that I always put some margarine in the foil packet when I made them plus I sprayed the foil with bit of olive oil too.
