I had a bunch of bananas that were really ripe. Was tired of making smoothies and ran across an idea that my family and I love. It's so simple!
Here's the recipe:
Take one very ripe banana, peel it, wrap in foil and freeze. When frozen (about four hours) unwrap and eat your banana pop-which tastes like creamy banana ice cream--and is great for you health-wise--lots of potassium, fiber, and B vitamins and only about 106 calories.
Want fancier?
Peel bananas, slice up and put on a freezer-safe plate into the freezer. When frozen, put in blender or food processor, mix with a bit of honey and maybe some nut butter, if you like, whip 'em up, scoop into a bowl--and enjoy! Or put back into a container in the freezer for your banana ice cream when you get the urge.
But the banana frozen pops are yummy just plain, a tasty treat for these hot days of summer.
Here's a variation I saw in a book once, also very easy: Melt some semisweet chocolate or carob chips. Peel bananas and insert popsicle sticks into one end of each banana. Roll the banana in the chocolate and (if you like) in chopped nuts of your choice. Freeze between layers of waxed paper and eat like popsicles.
User Warning: Any kids served this dessert are guaranteed to make jokes about how much the pops look like sh#t on a stick.
