This was one of my wedding gift recipes. Super easy, and never fails to get rave reviews.

Grandma’s Zucchini Bread

1 c. oil
2 c. sugar
2 c. grated zucchini (remove seeds before grating, but leave skin on)
3 eggs
3 c. flour
1 tsp. salt
1 Tbsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
1/2 c. chopped nuts (optional)

Combine all ingredients in a large bowl and mix to combine. Pour into 2 greased loaf pans. Bake at 325 for 55 to 65 minutes. Allow to cool completely before slicing.
