What I make isn't fancy, but my family likes it when I make a cream sauce with ham cubes or bacon that's been sliced into bite size pieces and fried and I usually serve it with asparagus or Le Seur peas and a vegie salad. White sauce: 2 tblsp butter, 1 tblsp flour, 1 cup milk, salt and pepper to taste. I cook it for about 3 minutes. Sometimes I'll use the bacon drippings or the ham drippings to make the sauce. I also like to toss in whatever kind of cheese I have on hand.
You still have to use a type of sauce, although not the two you mentioned.
