If you have a favorite brand of jarred salsa (examples - Ortega, Pace, Old El Paso, Chi-chi's, Las Palmas), go to their website. Brands always have recipes

Good idea but I'm tying to form a foundation. That's why I said beginners......most beginners books give you a foundation to build upon.
I think I would go with Rick Bayless. This guy moved to Mexico to learn authentic everything. Watching his show I have adopted recipes without measurements. I don't think you would regret going with him - I wish I lived next door to him in Chi town so I could invite myself over for one of his backyard parties.

Go one. Rick is the expert in the Mexican food space for sure.
Are you looking for real Mexican, or Tex-Mex, or California Mex, etc? There are so many different kinds.
I spent most of my life in Houston, and when I moved here I really missed the Tex-Mex from that area, which is different even from other parts of Texas. I found a blog called Homesick Texan, and through that site found a recommendation for this cookbook. It's wonderful, and has so many recipes from restaurants I remember. The first time I made cheese enchiladas with chili gravy, I felt like I had been transported back to Houston.
Yah rick bayless is great. Ive been to his restaurants here in Chicago too and they are very good. It also depends on what type of Mexican you are looking to cook. Tacos and burritos or something much more complex like moles?
