I'm thinking that it would dry out. Also: it's so much easier to cut after it's been cooked -- it's not raw and slimy, and it just breaks apart with a fork after it's been in the crock pot.

Yes, they do just break apart. AND speaking of red pepper flakes, i think the original recipe called for them! My husband is picky about "heat" in his food, so i left them out. GREAT idea with the water chestnuts! I think I'll do that next time!
Crockpot chicken is in the crockpot right now. I came home from a few places and the whole house smells like it! I added green pepper, onion, and pineapple to the mix. Very nice aroma. Can't wait to try it! Gonna put it over rice. The bf will have to scoot the pineapples to the side!!!
So far it is not thickening like I would like it to but I think this may be due to the pineapple.

Glad you liked it!! Next time I make it, I'm going to put in broccoli and water chestnuts towards the end of the time. So, it didn't thicken for you either, huh? You didn't put the pineapple juice in too, did you?

I would say maybe a tbsp of juice went it, not more. Of course the pineapple chunks are really juicy on their own.
I used 2x the amt of cornstarch and it was still quite thin but the flavor of it all was seriously out of this world. The chicken was cooked perfectly.
To cut up the onion and pepper and throw in the chicken as well as measure out the ingredients took less than 5 minutes.
I didn't put in minced onions since I used the big onion pieces and I put in a seriously heaping tbsp of the garlic minced from a jar.
I would not change the flavor one bit but I wish it would have been thicker. When I had it all in the crockpot I was concerned whether or not there was enough liquid but it was fine.
A friend of mine here at work that I just gave this to said when he makes similar dishes in the crockpot, he puts the flour (in this case cornstarch) in at the very beginning. Anyone else make their thickened sauces in the crockpot this way?
Maybe I will try that because there was no thickening at the end and I didn't want it cooking any longer or my SO waiting any longer for some food in his belly!
