I wanted to save a bunch of jalapenos and other peppers but started reading about canning and realized I didn't have the time to figure out the canning pH stuff at that moment.

I chopped up the jalapenos finely, threw in some garlic and onions and salt and added 50% water and 50% apple cider vinegar.

Is this OK, and how long will it last refrigerated?

From what I've read, since jalapenos are not acidic, if you wanted to jar and store at room temp, you need MORE vinegar, given that is being refrigerated, how little vinegar:water ratio could I have used rather than 50/50 (I don't like vinegar much).

They won't last long, even in vinegar. The best way to preserve them, without canning, is to freeze them.

really? how long is not long? i am surprised to hear this. I read like 6 months in 50:50 vinegar.

What you made is what is commonly called "refrigerator pickle." It's generally considered to be good for about 3 weeks.

For longer shelf life, you need to either do a "hard pickle" in heavy salt brine, or can them in a hot water bath.

Or you can freeze them, or dry them.

I might go a week. Peppers can cause problems if they aren't handled very precisely. They are one if those foods that don't look like they should have issues, yet they do.

Pepper freezes beautifully. I roast and peel, and then wrap them up and into the freezer they go. They store a lot better frozen than they do canned.

Be very careful when you roast and peel jalapenos that you don't touch your face or eyes while you are handling the peppers.

our son in law, who has managed several relatively large restaurants, like Hard Rocks and loves to cook makes them about once a month. His basic food I think is jalapenos. Actually they last, even not picked for quite a wihile. I do can them, but I do not like the texture as well as fresh..
