Recipe 1

Garlic creamed spinach
1- 10 oz package frozen chopped spinach thawed and drained
1 cup low fat milk
2 cloves garlic minced
3 tbsp grated romano
1 tbsp butter
1 tsp kosher salt
3 Tbsp low fat cream cheese
1/4 tsp nutmeg
2 tsp cornstarch

saute garlic in butter, add spinach, nutmeg and salt and cook for 3 minutes. Add cream cheese and milk. cook until it starts to bubble, add romano cheese and stir. Add cornstarch and stir until thick.

Recipe #2
Mushroom creamed spinach

1 can cream of mushroom soup
1 package frozen chopped spinach drained and thawed
1 onion chopped
1/4 tsp nutmeg
1 cup milk
1 tbsp butter

Saute onion in butter, add spinach and cook a few minutes, add milk and can of mushroom soup, stir until thick.

Creamed spinach
2 bags fresh baby spinach
1/2 cup sour cream
1/2 milk whole or 1 %
1 tsp kosher salt
1/4 tsp nutmeg
1 tbsp olive oil
2 tsp cornstarch

Saute spinach in olive oil until wilted. Add sour cream and milk and stir. Let cook for a few minutes until it comes to a bubble. Add salt and nutmeg. Add cornstarch and stir until thick.

I have always loved the creamed spinach at local diners so these are my take on that. The 1st recipe is the one I made for tonight.

don't forget to add a 1/4 to 1/2 of a Knorr's chicken cube to any of these to give it extra special flavor

Thanks but that's too salty and I don't want chicken flavor in my spinach.

Default creamed spinach

I have a quick creamed spinach recipe:

1 10oz pkg frozen chopped spinach - cooked per the box directions, drain and press all the liquid out.

In the same pan, empty a can of Campbell's Cream of Celery soup, with a splash of milk, or half and half to thin the soup. Season with salt and pepper, stir in the cooked spinach, and blend well, grate som fresh nutmeg in to the mixture and then grate some fresh parmesan cheese. check for seasoning, and serve.

I'll eat that if you make it for me. No one in my extended family makes or seems to eat creamed spinach. I've had it a few times and it wasn't good.
