I've never frozen soup before but I have a ton of extra vegetables, would this freeze OK? Any tips on freezing it or is it just pop it in the freezer?

1 lb Ground Beef
5 c Water
1 lb can stewed tomatoes
1 c chopped onions
2-3 sliced carrots
2 ribs diced celery
1/3 c pearly barley
1/4 c ketchup
1 tbsp beef bouillon granules
1 tsp basil leaves
1 bay leaf

Brown ground beef in fry pan, drain fat.
Add ground beef and remaining ingredients into a dutch oven pan.
Bring mixture to a boil.
Reduce heat to simmer.
Cover and cook for 1 hour.
Remove bay leaf and taste soup, adding salt and pepper if desired.

Hi there, I freeze a lot of soups and that is now for 30 years. The only soups I do not freeze are pure potato and leech soups. They taste better fresh.We love soups and it is so practical to make soups ahead and freeze. One hint,after defrosting and warming on the stove up,check the flavor, because through freezing it might got more blunt. Good luck!

Yes it will freeze well. My advice is to freeze it in smaller size containers. Most people get tired of a large pot of soup before it is completed eaten. Also if I am going to put noodles in soup I do not freeze the soup with them because they tend to absorb too much of the broth. The best thing is to cook them separately and then add them right before eating.

I would let it cool a bit before putting it in a freezer safe container. I would try and use it within say 3-4 months though. The only soup I won't freeze is anything with a milk or cream base to it (potato soup, corn chowder, etc.) because I personally don't like the texture - to me it is never as creamy as it is when fresh. Yours is similar to my beef barley soup, and I have frozen it successfully many times.

I freeze soup all the time. Put in Zip Lock Freezer bags in small portions. As the other have said, don't freeze creamed soups, ie. potato, the texture changes and it just isn't good. kelsie

If you use tupperware to freeze your soup, DON'T fill it all the way to the top! It expands when frozen. But, yes, you can freeze that soup confidently. You can also can it and store it on your pantry shelf.

almost all soups freeze very well. Pasta based can get a little gummy (the pasta) but it is still great for cold winter nights. Nita
