Vidalia Sweets (and Maui Sweets, etc.) are sweeter and milder than regular yellow onions, and also have higher water content. That's why they are such favorites for eating raw.
Cooking with them, however, puts you at a slight disadvantage in most cases, because they take a lot more cooking down to develop much flavor. Cook a pot of onion soup with Vidalias next to a pot of onion soup with regular yellow unions and you'll discover the latter will be noticeably more flavorful.
