I'm using a ham hock and wanted to use up my turkey stock before it goes bad. Any reason why I can't use turkey stock in place of water if I'm using ham as well. Will the Mixing Meat Police get me!

I use chicken stock in my split pea soup that is cooked with ham hocks and it works fine. Go for it!

I only use half chicken stock and half water as on occasion full stock has the end product a bit too salty for my tasts..

Yeah, I tried all stock once and didn't like it at all. I use 1/3 - 1/2 stock.

I agree with the others, ham hock and turkey broth are both very salty I would add some water. Has your turkey stock been in the fridge since Thanksgiving? If so, I would taste it first to make sure it is still good before making a fresh pot of soup. If it has been frozen there is no problem.
