I'm looking for a broccoli casserole recipe that uses fresh broccoli, real cheese, no rice, and no canned soup to serve with my prime roast beef and Yorkshire pudding for Christmas. I like broccoli and rice, but we don't do any other starchy foods when serving Yorkshire.

I think this recipe sounds awesome, but my Yorkshire has lots of eggs and milk so I want something a little less rich.

why not just steam the broccoli and put a cheese sauce over it? I cook a lot of broccoli in casseroles but all have potatoes or rice. Sometimes I mix broccoli and cauliflower, sprinkle with seasoned salt and olive oil and roast at 400-425 for about 10 minutes and then sprinkle mozzarella or cheddar or Parmesan cheese and run under the broiler to melt.

Yeah, broccoli w/cheese sauce is what we usually do. Maybe I will just go with that.

I've decided on green beans with caramelized shallots and bacon. We eat broccoli several times a week so this will be a nice change. BTW, could not find broccoli rabe in the store or I would have tried that.

My recipe that people love (warning velveeta-ouch)
I steam fresh broccoli
squeeze lemon juice, lightly salt (personal preference)
put chunks of velveeta in the broccoli - which is in a casserole dish
mix together
bake at 375 for 25 minutes (or so)
sprinkle crushed ritz crackers on top for the last few minutes
I know you said real cheese and that you decided on another side but this is always a hit with family and friends of all "classes".

Try this recipe, my mom makes it every Thanksgiving:
3 packages of any brand steam in the bag broccoli cuts or florets
1 small onion chopped
1 clove garlic chopped
1 jar of cheese-wiz
1/4 cup water
1/4 milk
2 tbsp flour
3 eggs
1/2 plain buttered bread crumbs
4Tbsp butter

Microwave the broccoli according to package directions. When done place in food processor and pulse until smooth. In a large pot or fry pan, saute chopped onions and garlic in butter on medium high heat for about 6-7 minutes. Add cheese wiz, milk and stir well. Cook for about 3 minutes, add water and flour and keep stirring until the the cheese becomes smooth and creamy.Remove from heat and add pureed broccoli and eggs, mix well. Coat a large baking dish with non stick butter spray, pour broccoli mixture into pan. sprinkle buttered bread crumbs on top. If you don't want to use bread crumbs then you can use any greated or shredded cheese you like. My mom has always done this with bread crumbs. Bake on 350 for 30 minutes.

Harvesting broccoli from my garden now and I would love a recipe that can be prepared in a Crockpot: fresh broccoli and rice; cheese is optional but no canned soup.

Anyone have a recipe to share?

Really? Mine only uses four eggs - and I let the batter rest in the fridge overnight.
