The only way I can have my kale is in my nutriblasts (shakes). I tried it today in a detox soup I made and ugh, it was just horrible.

Any suggestions?

I treat them like collard greens with ham or turn them into delish chips.

I just can't make myself like kale or any of the other leafy greens aside from baby spinach and salad greens. I can eat it, I just don't find it tasty at all. I tried making kale chips that everyone claims are so great and are 'just like potato chips' - um, what? They taste NOTHING like potato chips, aside from the salt on them. The actual flavor of the kale is too strong and overpowering, and the texture is weird, like eating dry leaves. I just don't get the hype...

I shred kale with my chef's knife, shred purple cabbage, add some very fresh salad greens, cucumber, red bell pepper, garbanzo beans, feta cheese (optional), chilled edamame, diced fresh pineapple, dried cranberries (coarsely chopped), roasted pumpkin seeds, sliced toasted almonds....so yummy. I don't use dressing because it is delicious without it but you could certainly add dressing if you wanted to.

Kale is really tasty when it is shredded and used in salads - I try to buy tender baby kale at the farmer's market but any kale will do. It is the most nutritious green of all the greens.

I also shred kale and add it to homemade soups an stews (it needs to simmer for at least 40 minutes).

I use kale in my green smoothies...along with some fruit, protein powder, fresh lemon, a small knob of fresh ginger, stevia and hydrated chia seeds - a healthy meal from our Vitamix.

I wouldn't think they are anything like potato chips. But they are tasty with olive oil, red pepper flakes and salt. Then baked. I've also had it drizzled with honey and salt before baking that was interesting. And your taste buds might find them unpalatable regardless of how it's prepared. I've had broccoli rabe or ramps prepared in every way and it's highly bitter and overpowering to me.

I've liked kale every way I've it prepared. It sounds like you're just not a leafy greens person. There are lots of healthy foods you can eat if you don't like kale.

I agree with others - you might not just be a leafy green person.

That said, kale blends well with many flavors. I like to make marinaded raw kale salads. My two favorites include a homemade dressing of honey, olive oil, white wine vinegar, balsamic vinegar, and a little rosemary tossed with chopped kale, dried cranberries, walnuts, and goats cheese; the other is a dressing made of roasted garlic (and the olive oil that I roasted it in), tahini, dash of soy sauce, nutritional yeast (it tastes a little cheesy), lemon juice, and white wine vinegar tossed with kale and chickpeas. I eat a kale salad every day for lunch because I can make a big one on Sunday night and eat it all week - the longer is marinades, the better it is. Sometimes I even pop it in the microwave at work if it's cold out.

I also shred kale into my pasta, soups (particularly matzo ball soup!), and wilt it with garlic, olive oil, and lemon most nights to go with a baked potato.
