Winter is heading this way. I am looking for soup to have for dinner or lunch as a meal. Does anyone have one to share with me and everyone?

Corn Chowder

1/2 onion, finely chopped
2 ribs celery, finely chopped
Saute these in butter till soft.

Add 1/3 c flour, stir. Then add
3 c hot chicken broth and
1 potato, peeled and diced
Cook till tender.
Then add:
2 or 3 cans creamed corn
2 sm cans green chiles,
1 pint 1/2 & 1/2
Heat til just hot
add salt and pepper to taste.

It's so fast and easy, I make it all the time.

My favorite (one of them at least) is Lentil Soup.
The way my mom makes it (and now me too), turns out so well and it is a very robust type of soup.
Let lentils soak overnight. Rinse/ wash.
Use carrots, potatoes...soup greens...chop up very fine.
Add to lentils, let simmer until lentils and veggies are soft.
Add "Boershead Beef Franfurter" in the casings (found in most deli island case) and add.
Last thing you want to do is add a spritz of white vinegar!!
THAT'S what really makes the soup so darn good!
Season to taste!

How about a Vegetable Soup? So easy

Cut up any veggies you want..I add spinach, celery, baby carrots, onions, peppers, zucchini, you may add more or less. Don't add potatoes or corn (too starchy)
Cover with water, add 2 beef bouillion 3 chicken bouillion cubes ( I prefer Knorr's).
Simmer about 20-30 minutes.
Add can or two of beef broth and chicken broth.
Add large can of tomato strips or whole peeled tomatoes (I think 28 oz.)
Simmer a little while longer (tastes the best when you simmer all day)

Add about a handful of orzo or soup mac (these do not get soggy).

I usually make this in a spaghetti pot and have it all week.

Enjoy.

ditalini

Cover chicken w/water, add celery, carrots, onions, s&p. Bring to boil, reduce heat, simmer and remove "scum". Cook about 1 1/2 hrs. Carefully remove chicken, cool and remove meat from frame. Add tarragon, beans, ditalini, chicken.
