As far as I know, the only way to make caramel dipped apples is to melt Kraft caramels and dip into those. The recipe should be on the bag of caramels. Sometimes you can find the bag of caramels that includes the sticks for the apples.

Then you can dip them into all sorts of fancy decorations: chopped nuts, sprinkles, colored rock sugar....

As for chocolate dipped, melt some chocolate and dip the apples into it. You can buy chocolate intended for candy making if you want the easiest route.

Personally, I think candy coated apples look a lot better than they taste and they are difficult to eat. But they do look pretty.

Wash and dry apples thoroughly, unwrap caramels and melt in a double boiler. While caramels are melting place sticks in apples. Dip each apple in caramel and dry on wax paper.

OR

Wash apples, continue as above except instead of unwrapping apples you can buy a tin of caramel. This is what is used for the fair. Caramel Apple Dip #10 Can

I just got this recipe on FB and plan on trying it tomorrow. If you try it first, let me know how it is. Keep in mind it is just a dip but it might work for you.

Ingredients (printable recipe)
1/2 cup (1 stick) butter
1 1/2 cups brown sugar (dark is the best!)
3/4 cup light corn syrup
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla
Directions
1. In a 2 qt. saucepan, melt the butter over low heat.
2. Add brown sugar, corn syrup, and milk. Stirring to combine. Increase heat to medium or just below medium.
3. Stir constantly until mixtures starts to boil. (Use a spoon that doesn't melt!)
4. Remove from heat and stir in vanilla.
5. Serve warm or cool with apples or drizzle over ice cream.
Makes about 3 1/2 cups

Additional notes: For a thinner caramel, cook and stir mixture just until sugar completely dissolves.
Store extra caramel dip in the refrigerator. Microwave for a few seconds to soften before dipping.

Great recipes! Tip on the apples, rub them with vinegar to dissolve the outside waxy coating sometimes found on apples. Then rinse well with hot water rubbing vigorously.

Always start with really good, fresh apples. Honeycrisp, or Granny Smith.

You can make your own caramel, dip in caramel first, let dry a day. Then, dip in chocolate, let dry, drizzle with caramel, dip in chocolate again, dip in nuts. Drizzle with white chocolate. Let dry. Drizzle with dark chocolate.

Remember to temper the chocolate...

You can also dip in caramel and then roll the apples in chocolate chips and nuts...so good!

The vinegar mixed with water dip is very important. I have tried homemade caramel, but the best kind is the store bought ones. They stick really well, and don't become brittle.

Tip: coat your hands with butter before you press in the toppings. You can just dip it, but they stick better if you press them in.

1.melt caramels in a microwave safe bowl, stirring often.
2. Put prewashed and dried apples on sticks and dip in the caramel.
3. Dip in toppings and place on waxed paper
4. Repeat with other apples a few times, possibly up to 6
5. Coat hands with butter and press the toppings into the apples, You may have to push some of the caramel back into place because it is so drippy.
6. Let harden and then drizzle with melted chocolate. It looks pretty with milk and dark drizzled together.
