Some people say not to add eggs, I've always added one or two eggs, do eggs make that much of a difference ?

Yes eggs in the stuffing , not in the gravy . My grandmom used to put chopped up hard boiled eggs in her gravy it was not pleasant .

Sounds like blasphemy. Mom puts hard boiled egg bits in her giblet gravy, sometimes. Which we then pour on top of the stuffing/dressing.

I learned to make bread stuffing from watching and helping my mother ...... she always added an egg or two and mixed them in by hand....kneeding the wet ingredients. I can hear her now saying....."It makes it richer". I add a couple of eggs to my sage bread stuffing....and it does make it "richer"....what ever that means. I guess I do it because my Mom did and her stuffing was the standard by which I measure all stuffing.

I think holiday traditions and recipes are all about precious memories.
