I tried to cook calamari by boiling it. Its white meat turned out to be disgusting. It is so hard to chew, and it has a cellophane-like sheet on it. It is impossible to eat. They say you don't want to overboil it but tried either way - boiled it for a couple of minutes and for many minutes. It doesn't matter. It still tastes bad. However, when I buy calamari in the store (it is sold already cooked in strips with oil) or in a cafe as a part of some salads it is soft and delicious. I don't really get how they manage to cook it properly. Any ideas?
Calamari is best prepared very lightly cooked. It takes even less time to cook calamari than it takes to cook shrimp... usually about 1 minute (3 minutes if grilling as steaks).
Overcooking or undercooking Squid is disastrous, turning it into rubber. Slow-cooking it or flash-frying are the best methods.
