Default Left over turkey recipes

What do you like to do with your left over turkey?
Okay, here's what I make with mine. (That is after making the turkey soup) I have two recipes for tettrazzini and I like them both. I guess it depends on what you have on hand and if you feel like Parmesan or cheddar...both recipes can be very flexible. You can add left over veggies (bell pepper or celery are good, IMO) and use different kind of pasta.

Turkey Tetrazzini

1 (3 ounce) can mushrooms, drained (Or use fresh if you have any)
1 cup whipping cream or heavy cream (You can be flexible here, use 1/2 evaporated milk or use half and half)
8 ounces thin spaghetti, cooked and drained
2 cups cooked turkey
1/4 cup butter
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup chicken broth
2 tablespoons white wine (You can easily do without)
3/4 cup grated Parmesan cheese



1. Melt butter in saucepan; blend in flour, salt and pepper.
2. Cook until smooth and bubbly.
3. Stir in broth and cream, bring to a boil and let boil for one minute, stirring constantly.
4. Stir in sherry, chicken, mushrooms and spaghetti.
5. Pour into casserole dish and sprinkle cheese evenly over the top.
6. Bake uncovered at 350 degrees for 30 minutes, then turn on broiler and brown for 3-5 minutes--watch carefully.

Here's another Tetrazzini recipe


Turkey Tetrazzini
8 ounces spaghetti
1 1/4 cups onions, chopped
1 cup green peppers, chopped
3 tablespoons butter
5 1/2 cups cooked turkey
1 teaspoon garlic salt
4 cups cheddar cheese, shredded
2 cans cream of mushroom soup
1/2 cup milk
pepper to taste

1. Cook the spaghetti aldente.
2. Saute the onion and green pepper in the butter.
3. Mix together all ingredients thoroughly in a large bowl.
4. Place in freezer containers, label and freeze. When thawed, bake, uncovered at 350 for 30-40 minutes or until hot and bubbly.

Besides sandwiches?
TURKEY CHEESE PUFFS (serves 4)
3 oz cream cheese, softened
2 TBL butter, softened
2 TBL milk
Dash of Tabasco
2 cups cooked chopped turkey
1/8 tsp pepper
1/4 cup chopped celery or water chestnuts
8 oz can crescent dinner rolls or 1 pkg frozen puff pastry
1 egg white

Beat cream cheese & butter with a mixture until smooth. Add milk & Tabasco. Stir in turkey & pepper. Add celery or water chestnuts. Unroll crescent roll dough & separate into 4 rectangles. Press out perforations to seal. Spoon 1/2 cup turkey mixture in center of each rectangle. Moisten edges of rectangle with water. Bring four corners to the the center of filling. Pinch edges to seal. Brush with egg white. Place on ungreased baking sheet. Bake in a preheated 350° oven for 20-25 minutes.

Turkey a la king(I add olives too)

INGREDIENTS
2 tablespoons butter
1 green bell pepper, chopped
1 cup sliced fresh mushrooms
1 cup chicken broth
2 tablespoons all-purpose flour
2 1/4 cups cooked, cubed chicken breast meat
1 cup sour cream
2 egg yolks
1 pimento, chopped
4 teaspoons cooking sherry
salt and pepper to taste

DIRECTIONS
Melt butter in a large skillet over medium high heat. Saute bell pepper and mushrooms until tender, then stir in broth and flour and cook, stirring, until thickened. Add chicken, heat through and remove from heat.
In a small bowl combine sour cream, egg yolks, pimento, sherry, salt and pepper and mix together. Add this mixture to chicken mixture in skillet and heat thoroughly, stirring. Serve hot.

Turkey Pot Pie

Make a medium white sauce (any cookbook should have it)add leftoverveggies
carrots
diced potatoes
peas or green bean
zucchini
corn
broccoli

anything you like basically.

I add a little seasoned salt, black pepper, garlic powder

Heat up and serve in hot popovers.


Such a good comfort food!
