Probably not too original but I made this tonight and it was a big hit

2 meaty frozen boneless skinless chicken breasts
can of pineapple with juice-any kind
chopped onion
chopped peppers- I had green, yellow and red
couple of chopped carrots
2-3 T soy sauce
1/2 t ginger
1 t pepper
1/3 to 1/2 cup brown sugar
1/2 to 1 cup chicken stock

salt to taste- I didn't add any at all cause of the soy sauce

All mixed together- cooked on high for about an hour to get a good boil then low for 5-6 hours
I took the chicken out to shred and then added a mixture of 2 -3T cornstarch with 1/3 cup chicken stock back to liquid and got it hot and simmering till the sauce was the consistency I like- mixed the shredded chicken back into sauce to get it really hot again.
served on white rice
family ate it up with lots of compliments- the addition of the peppers gave it some really pretty color

Yum. I add soy sauce and ginger, makes it an island teriyaki taste.

I made a very similar recipe and it was the first time that chicken has graced my Crockpot.

That sounds really good, I'd probably leave the salt out too because the soy sauce and chicken stock probably have plenty.

Really- I think I cook chicken more in the crock pot than any other way. I really like crockpot cooking so I don't stand around the kitchen at 5 p.m. muttering to myself "What to fix...What to fix." Funny thing is I'm SAHM but around 4 or 5 I'm busy with homework or running kids around and fixing early in the day just works best for me.

Yep! I haven't had the Crockpot that long and thought that chicken breast would dry out. I started looking at recipes and decided to give it a try. So far, the chicken breasts have been great!

I think it sounds wonderful - and I will be giving it a try one night next week. It actually sounds pretty healthy, and I will probably use the brown sugar Splenda (hubby is diabetic). Thank you so much!!!
